lamb navarvin, basically beef stew, but using a lamb shoulder instead of beef chuck. grilled chicken paillard (grilled chicken, pounded/slices flat) with a mushroom cream sauce, slurried with butter.

i had to bust out four tournes of one potato...

alright so today, we made coq au vin. Chicken breast and leg poached in a red wine/chicken broth, with mirepoix,and bacon fat; until it reduces into a thick sauce (takes about an hour or so to reduce), and topped with parsley. it was fantastic...

but i can't wait until this block is over.
